Scrumptious Friends
The sweet taste of summer is here. Every Saturday during the summer local farmers sell their produce at a downtown market. Each week I purchase tomatoes, herbs, cucumbers, squash, peaches, peppers and anything else I desire. I realized yesterday I was out of basil- big dilemnia- as this would seriously ruin my plan to enjoy a tomato sandwich for lunch. Thank goodness I have friends with green thumbs. I quickly called my friend, Amber to see if I could get a few sprigs of basil to get me by until Saturday. She obliged my cravings. Please see the recipe below for the yummiest tomato sandwich.
Tomato Sandwich
2 slices of bread (your choice)
2 tablespoons Hellman's mayonnaise
1/4 tablespoon grated sweet onion
2-3 slices fresh tomato
Salt
Pepper
sprigs of basil
Directions: Combine the mayo and grated sweet onion. Spread on the slices of bread. Top bread w/tomatoes. Season w/salt and pepper. Top w/sprigs of fresh basil. (toasted bread is also wonderfu) Enjoy!
The sandwich should have provided me with enough delight for one day. After enjoying my sandwich I made plans for a friend and her children to join us at the Pond (family getaway w/pool- no I don't swim in a pond) for an afternoon swim. We loaded up the canvas bags w/sunscreen, towels, and books and headed to the Pond. It was so fun to hear our little girls and my son splash and giggle all afternoon. The only break we took was to enjoy my favorite summer dessert- popsicles. I never imagined our guests would thank us w/new potatoes plucked fresh from the soil and a beautiful head of cabbage. Wow, you would think I had hit the jackpot! Can't wait to cook these yummy veggies.
I just didn't think my week could get any better. Last night my hubby borrowed my car to make a quick run to the grocery store. This morning as he was leaving he noticed a grocery bag in the front seat. He was alarmed and thought he left some groceries from his evening run. When he checked out the bag he found fresh tomatoes and cucumbers. Someone dropped them off last night and placed them in the car. Who needs Santa, the garden fairy found our house! Life in a small town is so WONDERFUL!
Friends are great, but even more so when they share their talents and gifts.
