Hubby's Request
News flash- men have cravings too! For the last week my hubby has been requesting fish tacos for dinner. I asked if he had ever had fish tacos- NO. We have been to several restaurants serving the tacos, but he has never ordered one. I went on to look up a few recipes and show him the ingredients. He did not seem very impressed with the Baja recipes I located, but still insisted he wanted fish tacos. So glad he trust me to get creative and allowed me to just make something up. After considering the flavors, our roots and his taste I created a southern version. Watch out Paula Dean! My dear hubby has already asked for a repeat so I guess he liked my new recipe.
Southern Fried Fish Tacos
1 pack floured tortillas
4-6 fish fillets
All-purpose flour
Salt and Pepper (enough to season)
Creole seasoning (a few dashes)
Cooking oil
Tarter sauce
coleslaw (use premade- I like KFC)

Heat oil on med-high in a skillet. Combine flour, salt, pepper and creole seasoning. Dredge fillets in the flour mixture and place in the skillet once the oil is hot enough. Brown the fillets on each side and until fish is flaky. Make sure you place fish on paper towels after cooking to absorb excess oil. Spread each tortilla w/tarter sauce. Place a a fish fillet in the center of the prepared tortilla. Top with coleslaw. Wrap tortilla around fish and secure with a toothpick. Enjoy! After thought- You might add sweet pickles to the taco or on the side.
