A New Recipe- Mexican Yellow Rice Casserole

Most likely people reading this blog think my family is starving since I haven't posted a recipe in months. Have no fear! I have been busying with work and after school activities. The little time I get in the kitchen is spent making sure the kids have a healthy lunch. We also have a busy schedule keeping us away from home at least four nights per week. With this schedule, I find myself preparing simple meals like baked potatoes with chili, quesadillas and salads. I like to prepare a large dish on Sunday or Monday so we have leftovers for the week. Finally, tonight I got to prepare something new. I never leave well enough alone and prepare it as directed. Here is my recipe.
 2- 10oz packages of yellow rice
1 lb ground beef
3/4 cup water
1 lb Velveeta cheese
1 package taco seasoning
1 can green chilies (Ro-tel tomatoes)
 8 oz salsa
3 handfuls of crumble tortilla chips

 Cook yellow rice as directed on the package. 

Brown ground beef. Once the meat is browned, drain. Add the meat back to the skillet with the taco season and 3/4 cup water.

 Cut the Velveeta into cubes. Microwave on high for 2 minutes, stir. Microwave 2 more minutes and stir. Add the Rotel tomatoes and salsa to the cheese.

 Combine all ingredients and spoon into a sprayed 9 x 12 glass dish. Top with crumbled tortillas.

 Bake at 325 degrees for 20-25 minutes.
