Baked Cheese Appetizer

1 can crescent rolls
1 8 oz cream cheese
½ tsp. dill weed
Yolk of one egg
1 small jar of fruit preserves
Ritz crackers

Roll out crescent rolls and seal seams. Place cream cheese in the middle of the flat pastry. Sprinkle dill weed on cream cheese. Wrap the pastry around the cream cheese and seal the edges. Brush pastry w/egg yolk. Bake at 375 degrees for 20 minutes or until pastry is cooked. Place on serving dish. Spread preserves over baked cheese and serve with Ritz or buttery crackers.


Pickled Shrimp
5 lbs boiled, peeled and deveined shrimp
3 cups Wesson oil
½ cup fresh lemon juice
1 cup catsup
1 jar fresh horseradish
¾ cup Dijon (New Orleans style) mustard
½ cup finely chopped celery

Combine all ingredients except shrimp. Once ingredients are mixed toss shrimp with mixture and marinate. Serve cold.

Spicy Carrots
1 lb carrots, peeled and cut to julienned slices
1 cup white vinegar
½ cup sugar
¼ cup chopped onion
1 tsp pickling spices
½ teaspoon salt
¼ teaspoon dry mustard
2 cloves garlic, pressed
½ tsp pepper

Combine all ingredients except carrots. Bring to a boil. Add carrots. Cover and simmer 5 minutes. Allow carrots to cool in mixture. Place in a covered container and refrigerate until ready to serve. Drain and remove pickling spices before serving. This recipe can be prepared up to a week ahead. Yields 8-10 servings.


Lemon Bars
Crust
2 cups all-purpose flour
1 cup confectioners’ sugar
Pinch of salt
1 cup (2 sticks) butter, at room temperature

Filling
4 eggs
2 cups granulated sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon juice
1 tablespoon grated lemon rind

Preheat over to 350 degrees. Lightly grease a 13 x 9 inch pan. Make crust by combining the flour, sugar and salt in a large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the pan. Bake crust for 20 minutes. Combine ingredients to make filling. Pour the filling over the baked crust. Bake for 25 minutes. Sprinkle with confectioner’s sugar.

Last night the hubby and I attended a cocktail party for some dear family friends. They are marrying in late April. The party was absolutely wonderful-just the right mix of great location, great food and great family and friends. This party reminded me of all the wonderful parties I have been to for various occasions. It also helped me recall lots of menus I have planned over the years. Some parties I recall for the food only while others are significant for the guest or the location. A couple of years ago we attended a wedding rehearsal at the Beach Club at the Cloister on Sea Island. I could not tell you what we had to eat, but the location was unbelievable. We were seated seaside, underneath a white tent w/paper lanterns hanging from the roof of the tent. The tables were elegantly and simply decorated with a glass urn w/sand and a candle surrounded by shells- by far the most beautiful setting I’ve ever seen.

There wasn’t anything new and different on the menu last night, but it was simply delicious. Then menu for last night: shrimp w/cocktail sauce, mini chicken salad on croissants, grilled pork tenderloin w/horsey sauce, mustard and rolls, grilled veggies, spinach dip w/pita wedges, lemon squares, brownie bites w/whipped cream and fresh raspberries, carrot cake cupcakes and thin mints. Along with wonderful food were typical cocktail party drinks. Over the next week I’m going to post some of my favorite party food recipes, but here is a look at my favorite southern menus for various occasions.

Thank goodness my 10 year old son is off to see some college basketball in person. I find myself more and more monitoring ESPN. Even they have gone overboard analyzing the Tiger Woods story. I realize what he did was wrong, very wrong. However, I really don’t want my 10 year old to know the details of the whole sorted affair. He loves sports and likes to watch ESPN to catch up on the latest scores. I think journalism has continued to sink lower and lower since the OJ Simpson case. The press has been allowed unlimited access to every aspect of a person’s life including spouses and innocent children. Some might argue Tiger Woods ask for it by becoming a famous athlete. I agree Tiger Woods put himself in the limelight, but he did so for golf not on how to be a husband and father. As far as I know it he has attempted to keep all aspects of his personal life very private.

The world is full of people that want their entire lives broadcast on TV- the Hills cast, Paris Hilton, Nicole Ritchie, the Kardashians, and the cast of the Real World. They have asked for the media to invade every second of their lives. I don’t believe this is the case for professional athletes or even actor/actresses. I think these people should be respected for their vocation only. However, if they subject themselves to reality television they have opened the door wide open for media interference.

Every family has dealt with some type of addiction. No family is untouched by this type of situation. I hate to see people capitalizing on the heartbreak of others regardless of how rich and famous person might be. As a society we want it seems we want to see others hurt. I pray for our country to remember to do unto others as you would have them do unto you- love your neighbor and pray for him. Finally, exercise your right to not watch or read that stuff.

So excited to celebrate my son hitting double digits. As a mom I would really just rather him stay nine forever, but I know growing up is part of life. Before getting pregnant I prayed God would send us a healthy baby to love and cherish. God sent us the greatest blessing- this little boy is the most kind hearted person I know. When we sit down and have conversations I am constantly amazed at how his mind works. Just more evidence God has crafted each and everyone of us. Right now he wants to grow up and become a sports broadcaster. This is a very realistic goal due to his love of sports (pictured with one of his favorite football players). He teaches me something new about sports everyday. Happy Birthday Buddy!

While helping my son with some math recently, I discovered a entirely different way for teaching multiplication. I was bit puzzled as I watched my son use something that looked like a Punnett's Square to set up multiplication problems. I also asked him how he worked long division. He knew how to get answers, but could not tell me how he did it. I have also been puzzled by the array of topics he covers in math. After careful investigation of his math textbook, I was surprised at how little practice is given on any one concept. I also found practice test with multiple choice answers (I just think they ought to work out problems). In this book I also found questions where students were asked the best method for doing a double or triple number multiplication problems- the choices were mental math, pencil and paper, a calculator, or estimation. Well, I'm no mathematician, but in the 4th grade the only method you should use is pencil and paper. What kind of questions are we asking on test? This on top of the recent news about parents in Washington state suing the state school board over the discovery math curriculum. These experimental techniques we are using on our children are scary. I encourage every parent to take a look at what their children are doing in school. Write your state legislators and encourage them to take a closer look. My favorite television show of all time is Designing Women. A friend’s Facebook post early this evening got me thinking about how much I miss this show (must get it on DVD). I just love honest southern women. My favorite episode of all time was Bernice’s Sanity Hearing. All southerners know we all have eccentrics in our families. Here is a conversation between Julia and Bernice’s niece Phyllis:

Julia: And just for the record, I think you should know, even if Bernice were crazy, that doesn't necessarily mean she should be put away.
Phyllis: What are you saying?
Julia: I'm saying this is the South. And we're proud of our crazy people. We don't hide them up in the attic. We bring 'em right down to the living room and show 'em off. See, Phyllis, no one in the South ever asks if you have crazy people in your family. They just ask what side they're on.
Phyllis: Oh? And which side are yours on Mrs. Sugarbaker?
Julia: Both.

Marjorie: Why, yes I am.
Julia: I'm Julia Sugarbaker, Suzanne Sugarbaker's sister. I couldn't help over hearing part of your conversation.
Marjorie: Well, I'm sorry. I didn't know anyone was here.
Julia: Yes, and I gather from your comments there are a couple of other things you don't know, Marjorie. For example, you probably didn't know that Suzanne was the only contestant in Georgia pageant history to sweep every category except congeniality, and that is not something the women in my family aspire to anyway. Or that when she walked down the runway in her swimsuit, five contestants quit on the spot. Or that when she emerged from the isolation booth to answer the question, "What would you do to prevent war?" she spoke so eloquently of patriotism, battlefields and diamond tiaras, grown men wept. And you probably didn't know, Marjorie, that Suzanne was not just any Miss Georgia, she was the Miss Georgia. She didn't twirl just a baton, that baton was on fire. And when she threw that baton into the air, it flew higher, further, faster than any baton has ever flown before, hitting a transformer and showering the darkened arena with sparks! And when it finally did come down, Marjorie, my sister caught that baton, and 12,000 people jumped to their feet for sixteen and one-half minutes of uninterrupted thunderous ovation, as flames illuminated her tear-stained face! And that, Marjorie - just so you will know - and your children will someday know - is the night the lights went out in Georgia!


Sugar, Sugar, Sugar:

Suzanne: No offense, Julia, but if this Libby person is as bad as you say, you are way out of your league. I know these kind of women. They'll kiss you and call you honey and slop sugar all over you while all the time they're just thinking about themselves. I mean, that terminator stuff doesn't work with them. You gotta fight sugar with sugar. They'll find that's a job for professionals.

The Keg Party
Charlene: Where the heck are you?
Julia: If you must know, Charlene, I'm at a keg party.
Charlene: Julia! I can't imagine you at a keg party! I mean . . . y'know, you have so much class.
Julia: That's just the point, Charlene. If you have class, you have it. It doesn't matter where you are or who you're with . . . and I have to go now because Craig is getting ready to drink out of the funnel.

Breastfeeding:
Suzanne: Oh, Charlene, that reminds me. I saw two things on TV I gotta tell you about. Now first one is, there was a segment on the news about that league of breast feeding people you like so much, you know, La Leaky.
Charlene: Suzanne, it's La Leche.
Suzanne: Oh, well. Whatever.

Suzanne: Well, I don't know why Charlene insists on nursing this baby. It's like some kind of epidemic. Everywhere I go, anytime of the day or night, I see all these women whipping themselves out and acting like public fillin' stations. I mean, they act like just cause there's a baby attached, it's not a breast anymore. Could you see me unleashing one of these outdoors? All hell would break loose.
